Fruit Salad to Die For

East River Electric Country Cookin’ Volume 32 – 2016, p. 11

1 can pineapple chunks, in their own juice

1 small box instant vanilla pudding

1 can mandarin oranges, drained

1 bunch green grapes, halved

1 pkg. small strawberries, sliced however you want

2 bananas*

Pour the pineapple, juice and all, into a bowl. Add the pudding mix and stir until creamy. 

Ken's was out of sugar-free vanilla pudding so I enjoyed a decadent moment of eating the real stuff.


Stir in the drained mandarin oranges. Add additional fruits and stir in until completely covered and creamy. 

I chopped the strawberries up pretty small, which added nice variation.

Refrigerate the salad until well chilled. *May want to wait and add bananas right before serving to prevent them from turning brown.

So much going on! And it's all delicious!
