Colorful Vegetable Bake

Taste of Home Start with a Mix, p. 38

2 cups frozen cut green beans, thawed and drained

2 medium green peppers, chopped

6 plum tomatoes, chopped and seeded

2-3 cups (8 to 12 ounces) shredded cheddar cheese

3 cups chopped zucchini

1 cup biscuit/baking mix

½ teaspoon salt

½ teaspoon cayenne pepper

6 eggs

1 cup milk

Place beans and peppers in a greased 13-in. x 2-in. baking dish. Top with tomatoes, cheese and zucchini.

A promising start.


In a bowl, combine the biscuit mix, salt, cayenne, eggs and milk just until moistened. Pour over the vegetables.

Bake, uncovered, at 350F for 55-60 minutes or until puffed and a knife inserted near the center comes out clean. 

An attractive result!


Let stand for 10 minutes before serving.

But ultimately, an underwhelming outcome.

My Rating: 3/5 "It's not that there's anything especially wrong with this. It's just that the crust on the top doesn't do anything to make the vegetables more interesting. The overall effect is bland, despite the cayenne hustle. I wasn't enough of a fan to eat the leftovers, but my partner discovered that he liked them if he doused them with salsa and hot sauce."
