Grape and Jello Ambrosia

Fabulous Food the Costco Way, p. 90

1 6-ounce package lemon jello

1 6-ounce package lime jello

1 8-ounce package cream cheese, softened

1 20-ounce can crushed pineapple, drained

1 ½ cups miniature marshmallows

1 ½ cups chopped walnuts

2 cups green seedless grapes, halved (about 12 ounces)

Prepare jello according to package instructions. Refrigerate jello until set, approximately 4 hours.

In a large bowl, beat together lemon and lime jello. Beat in softened cream cheese.

I used cream cheese spread, but that wasn't really soft enough cold. Warm it up first.

Fold in pineapple, marshmallows, walnuts, and grapes.

I was cooking for a crowd with little kids so I quartered the grapes.

Pour the mixture into a 9-by-13-inch casserole dish. Refrigerate a minimum of 2 hours or overnight.

Oh, the gelatinous glory.

My Rating: 4/5 "This had a stronger flavor that regular ambrosia, that's for sure. The lemon and lime make this feel much more like a dessert than like a Midwest salad. But the marshmallows and the walnuts give you what you're looking for in the basic dish. Overall quite refreshing!"
