Pear-Waldorf Salad with Swiss Cheese

Better Homes & Gardens Salad Book, p. 30

1 cup diced, pared fresh pears

3 tart medium apples, pared and diced (about 3 cups)

2 tablespoons lemon juice, fresh, frozen, or canned

---   ---   ---

¾ cup diced Swiss cheese

½ cup celery slices

½ cup broken California walnuts

2/3 cup mayonnaise or salad dressing

---   ---   ---

Salad greens

So many cubes!

Sprinkle pear and apple cubes with lemon juice. Add cheese, celery, and nuts. Toss lightly with mayonnaise. Chill. Serve on salad greens. Trim with pear wedges or apple rings, if desired.

I decided that the rando salad greens were enough of a trim.

My Rating: 4/5 "I know that 60s recipes are comedy material these days and that mayo is out of fashion, but this really does taste good. The flavors meld well, the cheese adds variety of texture, and the mayo gives everything a comfort-food feel. It kept well too, which surprised me. Lemon juice really works!"
