Strawberry Bottom Cheesecake

4 ounces cream cheese, softened

¼ cup sugar

½ cup sour cream

1 ½ cups frozen non-dairy whipped topping, thawed

¾ cup strawberry glaze, divided

1 ready-made shortbread pie crust or graham pie crust

2 cups sliced fresh strawberries

In small mixing bowl beat cream cheese and sugar on medium speed of electric mixer until fluffy. Add sour cream. Beat until combined. Fold in whipped topping.

Sooooo creamy...


Spread half of glaze in crust. In medium bowl gently stir together strawberries and remaining glaze. 

My partner walked by at this point in the process and stopped and stared because he thought it looked so good.


Spoon into crust. Spread cream cheese mixture over berries.

Refrigerate at least 4 hours or until set. Garnish as desired. Store in refrigerator.

NOTE: I made this low-sugar pretty easily by using stevia instead of granulated sugar, lite whipped topping, and sugar-free strawberry glaze. 
 

My Rating: 4/5 "Super quick and easy to make, and the ingredients are cheap too. It's not a cheesecake in the sense you were probably thinking when you clicked the recipe, but that doesn't mean it's not tasty af. The strawberries are wonderful - dice 'em up real small."
