Tropical Rice

South Dakota Honey Cookbook Volume 1, p. 57

2 cups white rice

2 tsp. butter

1 tsp. salt

4 cups water

¾ cup honey

1 tsp. ginger

1 tsp. cinnamon

1 16 oz. can Mandarin orange segments, drained

1 15 ½ oz. can chunky fruit cocktail, drained

Bring water to a boil. Add butter, salt and rice. Return to boil. Stir, cover, reduce heat and simmer for 25 minutes. Do not lift lid. Place cooked rice in bowl adding honey and spices while still hot. 

It's just the right proportion of honey vs. rice.


Next add drained fruit, tossing slightly.

Served with a tortilla chicken breast from Kessler's - sweet and spicy!


My Rating: 5/5 "This rice is glorious. I have a sweet tooth, so getting to eat something like this as part of the main meal was a treat. Loved the honey, loved the fruit, and the spices are their perfect counterpoint. It's a sometimes food, but it's a wonderful sometimes food. (Note: my partner, who prefers salty to sweet, was not as big a fan of this as me. But he still gave it a 4/5.")
