Grilled Chicken & Veggies Over Rice

Knorr

2 Tbsp butter, melted

4 tsp. Italian seasoning

2-1/2 lbs. chicken parts

2 medium zucchini and/or yellow squash, sliced diagonally

1 medium onion, cut into ½-inch-thick slices

1 medium red bell pepper, quartered

1 package cheddar broccoli rice side, prepared according to package directions

Target only had the broccoli cheddar PASTA side, which worked out just fine.


Blend butter with Italian seasoning in small bowl.

As chicken flavorings go, this isn't a very exciting one.


Brush chicken and vegetables with seasoning mixture.

Grill or broil chicken and vegetables, turning occasionally, until chicken is thoroughly cooked and vegetables are tender. Serve chicken and vegetables with cheddar broccoli rice side.

No red peppers at Target, so this wasn't as colorful as it should have been.

My Rating: 3/5 "This was confusing. I wasn't wild about the idea of eating a grilled onion just, like, by itself. The chicken and zucchini were ok but bland. The broccoli cheddar-ness of the side didn't really mesh with the chicken and veggies. (I put some barbecue sauce on the leftovers and that made it better.)"
