Smoked Turkey Reuben Sandwiches

Dressing:

½ cup (4 fl oz/125 ml) mayonnaise

¼ cup (2 fl oz/60 ml) bottled chili sauce

1 ½ tablespoons sweet green pickle relish

Sandwich:

8 slices rye bread

¼ cup (2 oz/60 g) unsalted butter, at room temperature

½ lb (250 g) Swiss cheese, grated

¼ lb (125 g) sliced smoked turkey

1 cup (6 oz/185 g) uncooked sauerkraut

To make the dressing, in a small bowl, stir together the mayonnaise, chili sauce, and pickle relish until well mixed. Set aside.

So many great things in one place!


Lay the bread  slices on a large work surface and spread one side of each slices evenly with the butter. Turn the slices over. Spread the other side of each slice evenly with the dressing.

Sprinkle a bit of cheese on 4 of the dressing/spread bread slices, then lay the turkey slices over the cheese, dividing them evenly. 

Don't skimp on that homemade Thousand Island.


Make sure the turkey does not hang over the edge, trimming if necessary. Spread the sauerkraut evenly atop the turkey, and then distribute the remaining grated cheese evenly over the sauerkraut. Top with the remaining slices of bread, buttered sides out, and press down firmly to compact the sandwiches.

Place a large nonstick frying pan or griddle over medium-high heat. Using a wooden spatula, carefully life the sandwiches from the work surface and place in the hot pan or on the griddle.

This was kind of exciting becuase I legit don't remember the last time I bought spreadable butter.


Grill, occasionally pressing down gently on top of each sandwich with the spatula, until the underside is golden, 4-5 minutes. Carefully turn the sandwiches over and cook, again pressing down on them, until the second side is golden and the cheese has melted, 3-4 minutes longer. Turn over one more time and cook for 2-3 minutes longer.

Tramsfer to individual plates and serve immediately.

Don't cook it for the lengths of time the recipe wants you to. You'll just incinerate the bread.
