Cauliflower Fried "Rice"

Green Giant

1 tbsp. vegetable oil

1 clove garlic, minced

½ tsp. grated fresh ginger

1 (10 oz.) package riced veggies and cauliflower medley

1-2 tbsp. soy sauce

1 egg, lightly beaten and scrambled

Heat oil in large nonstick skillet over medium heat and cook garlic and ginger 1 minute or until fragrant.

Stir in riced veggies and cook 4 minutes, stirring occasionally or until tender crisp.

Stir in soy sauce and cook 1 minute.

The co-op only had plain riced cauliflower, but that worked just fine.


Stir in egg and cook 1 minute or until heated through.

My Rating: 3/5 "I wanted this to really jazz up the cauliflower, and unfortunately there wasn't much of a kick. I think a little green onion would go a long way here, or some water chestnuts. It's not bad, it's just... riced cauliflower with soy sauce."
