Southwest Sloppy Joes

1 lb. extra lean ground beef or turkey

1 can (15.25 oz.) southwest whole kernel corn, drained

1 can (14.5 oz.) petite diced tomatoes with green chilies, not drained

1 diced green bell pepper

1/3 cup uncooked quinoa

1 Tbsp. Worcestershire sauce

½ cup ketchup

12 whole grain hamburger buns, lightly toasted

Brown beef in a large non-stick skillet over medium-high heat. Add 1 cup water and remaining ingredients except buns; stir. Bring to a boil over medium-high heat.

I had every intention of making this with ground turkey but then Ken's didn't have any.


Cover; reduce heat to low and simmer 15 minutes. Uncover; simmer 5 minutes to thicken to desired consistency. Serve on buns.

In my case buns, and leftover Cauliflower Fried "Rice."

My Rating: 4/5 "Lots of neat additions to your traditional Joes here. I especially enjoyed the quinoa - it added neat texture. The sweet and spicy Southwest flavors added a dose of fun. It wasn't as sloppy as it could have been, which perturbed my partner, but it was still really tasty."
