Pumpkin Spiced Hot Chocolate

4 tbsp. unsweetened cocoa powder

1 tsp. cornstarch

3 tsp. Stevia or Truvia or 4 tbsp. sugar

½ tsp. vanilla extract

2 cups coconut milk, unsweetened from carton or whole milk

4 tbsp. pumpkin

½ tsp. pumpkin spice

Well that's unusual.


Put all the ingredients into a saucepan and bring to a slow simmer. It will thicken a bit. 

Toil and chocolate.


Pour into mugs, top with whipped cream or marshmallows.

This needed much more marshmallows than this.

My Rating: 3/5 "There's a lot going on here, but it was hard to pick out the different elements in the final product. You couldn't really taste the pumpkin, and the spice just made the chocolate taste darker. Marshmallows make this better, so use a lot of them to enhance the sweetness and add variety."
