Garlic Salmon Linguine

Taste of Home Dinner on a Dime, p. 89

1 package (16 ounces) linguine

3 garlic cloves, minced

1/3 cup olive oil

1 can (14-3/4 ounces) salmon, drained, bones and skin removed

¾ cup chicken broth

¼ cup minced fresh parsley

½ teaspoon salt

1/8 teaspoon cayenne pepper

No cans of salmon at Target, so I decided (apropos of nothing) that three of these packets would do the trick

Cook the linguine according to package directions. Meanwhile, in a large skillet, saute garlic in oil until crisp-tender. Stir in the salmon, broth, parsley, salt and cayenne. Cook until heated through. 

That's a lotta parsley.


Drain linguine; add to the salmon mixture and toss to coat.

What a cheerful pasta!

My Rating: 3/5 "I was really excited for salmon and olive oil, but there's not enough of either to really make this interesting. And of course canned salmon lacks that certain pizzazz. But I did make the leftovers substantially better with a healthy dose of Parmesan, so I'd definitely recommend giving that a try."
