Banana Bread II

Now You’re Cooking, Connecticut! p. 38

½ cup butter or margarine

½ cup sugar

½ cup firmly packed brown sugar

2 eggs

1 ½ cups sifted all-purpose flour

1 teaspoon soda

½ teaspoon salt

1 cup mashed banana

½ cup sour cream

1 teaspoon vanilla extract

½ cup nuts (optional)

In a large bowl mix butter, sugar and eggs together, set aside. Stift dry ingredients. Mix dry ingredients alternately with butter mixture. Add mashed banana, sour cream and vanilla; stir in nuts if desired. 

The nuts were a hodgepodge of almonds and walnuts I had laying around.


Mix well; pour into a 9x5x3 inch loaf pan and bake at 350 degrees F for 45 to 50 minutes.

My Rating: 4/5 "I was leery of this because this didn't have spices in it. Banana bread that tastes like bananas? So weird! But it grew on me after I got used to it. The bread is moist and the fruit flavor really shines through!"
