Quick Sesame Chicken

Good & Gather

½ pkg. popcorn chicken (about 3 cups)

¾ cup orange juice

¼ cup packed brown sugar

1 Tbsp. soy sauce

1 Tbsp. rice vinegar

1 Tbsp. cornstarch

1 tsp. sesame oil

Seasonings: dash or two ground ginger, garlic powder, red pepper flakes

Toasted sesame seeds, if desired

Heat chicken as directed. Meanwhile, whisk remaining ingredients except sesame seeds in medium microwave-safe bowl. Microwave on HIGH 2 minutes; stir. Microwave 1 to 2 minutes longer until bubbly and thickened. Let stand 1 minute. Add hot chicken to sauce and toss. Garnish with sesame seeds.

Serve with hot rice and cook-in-bag snap peas to make it a meal.

My Rating: 4/5 "This is zesty! The sweetness is nice, but there's some complexity to the flavor too that makes it more interesting than your average food court orange chicken. It was a hit with our toddler as well, and that kid is SO picky. Useful quick-ish recipe!"
