Shallot Butter

River Valley Specialty Produce

2 shallots, finely chopped

2/3 cups dry white wine

4 tablespoons butter

1 tablespoon finely chopped parsley

Salt and pepper to taste

Chippity chop!


In a small saucepan, combine shallots and wine. Simmer over low heat until liquid is reduced to ¼ cup, approximately 5 minutes. Cool. In food processor or small bowl, combine the cooled shallots, butter, parsley, salt and pepper to taste.

So much variety going in!

And so little variety coming out!

My Rating: 4/5 "I'm torn on this one because it tastes amazing, def a 5/5, but it looks... pretty gross. The consistency is really weird and it's hard to convince people that it's something they should put in their mouths. If you're a flavor person you're going to love this, but if you're a visual/texture person maybe not. I'll leave it up to you."
