Pecan Spinwheels Bread Puddings

8 Pecan Spinwheels snack cakes

¾ cup milk

2 eggs

½ cup lt. brown sugar

1 teaspoon vanilla

1 tablespoon melted butter

1/8 teaspoon salt

1/3 cup raisins

1/3 cup dried cranberries

1/8 teaspoon nutmeg

1/8 teaspoon cinnamon

Preheat oven to 350F. Line 12 muffin cups with paper liners or grease muffin pan.

Combine milk, eggs, brown sugar, vanilla, salt, nutmeg and cinnamon in medium bowl. Mix well.

Cut Pecan Spinwheels into quarters and add to milk mixture.

This was satisfying to do.

Add raisins and cranberries to mixture. Let stand 15 minutes to soak up liquid.

Spoon bread mixture equally into prepared muffin cups. Drizzle with melted butter.

Bake 30-35 minutes or until the bread puddings are puffed up and golden brown.

They look enough like muffins that we were able to tell our 4YO that's what they were so he would try them.


Allow to cool completely before serving.

But they're really adorable tiny little bread puddings!

My Rating: 5/5 "These are pretty amazing. Good bread pudding starts with good bread, and a snack cake is a creative twist for that foundation. The outcome is nice and most with a robust flavor. The fact that they're individually-sized makes things even better!"
