½ c. rice
1 c. cream
3 eggs
1/3 c. sugar
1 c. milk
½ c. raisins
Cook rice until partly done, 2 to 3 minutes. Beat eggs and add sugar, cream and milk. Add cooked and drained rice and raisins.

Pour
into a buttered casserole dish and sprinkle with cinnamon and a little sugar.
Bake until set, 350F about 1 hour.

A friend who grew up with this told me that it should be the main dish, so we had it with roasted carrots and potatoes. |
My Rating: 4/5 "This is a beautiful idea especially because it's a sneaky way to eat dessert for dinner. It's a sweet, fluffy treat that's nicely grounded with the rice. Now, the rice is a little surprising in the middle of everything else, but once you're used to it the flavor is spectacular."
