Vegetable Scramble

Richard Simmons Deal-a-Meal Cookbook, p. 59

¼ cup chopped mushrooms

2 tablespoons chopped green onion

1 tablespoon water or chicken broth

1 egg

2 tablespoons non-fat milk

1/8 teaspoon each dried oregano and basil

Salt and pepper to taste

2 cherry tomatoes

In small non-stick skillet, saute mushrooms and onion in water until soft, and liquid has evaporated.

Reading that instruction had me going "Onion? What onion? Oh..."


In small bowl, beat egg with mlik and crushed herbs.

Add egg mixture to vegetables in skillet, reduce heat and stir gently until egg is set.

Garnish with tomatoes.

Served with challah and jam.

My Rating: 3/5 "I feel like the 80s were an era of American cooking where healthy eating was regarded as bland, boring eating. There really isn't much going on with these eggs unless you go balls to the wall with the salt and pepper, in which case they mostly taste like salt and pepper. The tomatoes are the best part, both for color and flavor. Sorry, Richard Simmons. This recipe isn't as fabulous as you were."
