Chicken Strips

Our Family

¼ cup flour

1 egg

1 Tbsp buttermilk

½ cup Parmesan

1 package (16 oz) chicken breast tenders

Cooking spray

Heat oven to 425F. Line cookie sheet with foil and coat with cooking spray. In a shallow dish, place flour. In another bowl, beat egg and buttermilk. Finally, mix bread crumbs and cheese.

I mixed some panko into the finer bread crumbs to add texture

Coat chicken with flour; dip into egg mixture then coat with bread crumbs. Place on cookie sheet.

Such texture!

Bake 15 to 20 minutes, turning once, until chicken is no longer pink in center and coating is golden brown.

So... it's really hard to turn these without ripping the breading off

My Rating: 4/5 "I did enjoy how moist the chicken was after baking. Dry chicken is a huge turnoff for me, but this kept me going. That said, I wish the breading didn't come off so easily during the turning process in the oven. (And yes, I did put cooking spray on the aluminum foil.) In the end they ain't pretty, but they taste fine.
