Chicken Veloute



1 pound boneless, skinless chicken breasts, cut into chunks
2 tablespoons butter or margarine
2 tablespoons flour
1 cup water mixed with seasoning packet
1/8 teaspoon nutmeg
1 package chicken ramen noodles, with seasoning packet


I kind of enjoy cutting up meat. I'm not sure if that makes me a healthy omnivore, or a  latent serial killer. 

In a frying pan, brown chicken until done.


Not done. 

Done!


In a saucepan, melt butter over low heat. Mix in flour, stirring until smooth and bubbly. 

There's not a lot to stir. Don't panic.


Remove from heat. Stir in water mixture and nutmeg. Heat to boiling, stirring 1 minute. 

See? It gets bigger.


Add chicken and simmer over low heat.

Simmer down simmer down simmer down now.


Cook noodles in warm water according to package directions and drain. Top warm noodles with chicken and sauce. 

I won't insult you by illustrating the process of cooking the ramen noodles. 


Makes 2 servings. 

And those servings go a lot farther if you have a side, like Fresh Green Beans!
