Porcupines

Retro Diner, p. 103

½ cup uncooked long grain rice
1 tblsp grated onion
1 tblsps chopped green pepper
1 tsp salt
Dash of black pepper
1 pound ground beef
1 can tomato soup
½ cup water

In a medium bowl mix together rice, onion, green pepper, salt, black pepper, and ground beef.

Doing this with your hands really is the easiest way.

Form into over-sized meatballs.

In a large skillet heat soup with water.

Add meatballs, cover, and cook on low about 50 minutes.

They look like normal slightly oversized meatballs, and then...

POOF! Porcupines. :)

Served with some leftover Buttermilk and Chive Mashed Potatoes.

My Rating: 3/5 "The primary attraction here is the neat porcupine-ing trick these do while they're cooking. It's entertaining. But speaking purely for my own results these came out really dry, and I also had trouble because the tomato soup congealed and burned itself to the bottom of the pan. I guess when they say cook this on Low they mean Really Low."
