Sweet Potatoes with Cranberry Streusel


1 (40 ounce) can sweet potatoes, cut in half
2 cups miniature marshmallows
½ cup all-purpose flour, divided
½ cup dried cranberries
½ cup quick oats
1/3 cup firmly packed brown sugar
¼ cup butter, softened
½ teaspoon ground cinnamon

Place potatoes in a greased 9x9-inch baking dish.

It's about to get sweet up in here.


In small bowl, combine remaining ingredients; sprinkle over sweet potatoes.

It's like granola, but the children's-breakfast-cereal version.



Bake in preheated 375F oven 15-20 minutes or until marshmallows are golden brown. 

Beautiful stuff.

We just had bowls of this for dinner by themselves - and it was an amazing dinner.
