Yam Mallow Casserole

Bruce’s Yams

1 (40 oz.) can cut sweet potatoes in syrup, drained

½ cup brown sugar

1/3 cup butter or margarine

½ tsp. salt

1 cup large marshmallows

Heat oven to 350F. Mix salt and brown sugar. Combine drained can of sweet potatoes, brown sugar mixture and butter or margarine in a large mixing bowl, then transfer to a casserole dish. 

At first I wondered why you weren't suppsed to mash up the sweet potatoes, but they get pretty mashed when you're stirring in the other stuff.


Bake uncovered for 30-40 minutes until glazed. Remove from oven and pace marshmallows side by side on top of the casserole. Bake until golden brown.

Bubbly in so many ways!

Served with an It's a Wonderful Life and a giant smoked turkey leg because I felt like being a Neanderthal.


My Rating: 5/5 "I dig a good sweet potato casserole, and this is a GREAT one. It's sweet - it's really sweet, definitely sometimes-food sweet. But that makes it a great side dish for something savory that way, and you'll love every bite."
