pound flaked crabmeat, or flaked, steamed whitefish (cooled)

tablespoons fresh dill, minced
4
scallions, minced
1
cucumber
Juice
of 1 lemon or more
¼ cup
sliced water chestnuts
½
teaspoon sea salt
Slice cucumber in half lengthwise and scoop out seeds.

The easiest way I could figure out to do this was to score it with a knife, and then scoop the seeds out with a spoon. |
Dice
into 1/4 “ pieces. Combine all ingredients and mix gently.
Happy imitation crab meats come from Walmart. |
I couldn't find fresh dill, so I used two teaspoons of the dried stuff. Not as fun to chew, but the flavor was there. |
HAVE AT YOU! GENTLY. |
Serve on individual
beds of bibb lettuce accompanied by crackers, or as sandwich filling.
It's a bowl full of healthy. |
My Rating: 3/5 "Fun, fresh flavors combined with an intriguing mix of textures make this a peppy little salad. It only keeps for about a day, though, so eat it up fast!"
