15 –
20 garlic cloves
7 oz
lightly roasted peanuts
6 – 8
large dried red chilies
Oil
Salt
The best way to make this is to grind all the ingredients
together in a mortar and pestle until you have a thick, fairly smooth paste.
Alternatively grind them in a blender, adding the oil a little at a time and
scraping down the sides of the blender with a spatula with each addition.
Here's how it works in the blender. |
Add the oil a little at a time, starting with enough to fill the very bottom. |
Then blend. |
Then you'll need to add more oil, because this happens. (This step happens repeatedly.) |
Eventually, you end up with something like this. |
Although it's technically a condiment, we just spread it on bread and ate it. |

I would consider roasting the garlic first.
