shredded Mexican blend cheese, divided
1 jar
(3-ounce) bacon bits (or substitute 1 can (12 oz) SPAM, diced)

fajita style flour tortillas

salsa
In large bowl, stir together eggs, 1 ¼ cups cheese and ½
cup bacon bits.

In large nonstick skillet, over medium heat, melt butter. Add
egg mixture to skillet.
I had bacon in the freezer, so I just used that instead of bacon bits. (Or Spam? Seriously?) |
Cook 5 to 8 minutes or until eggs are set but still
moist, stirring frequently.
Scramble those sons-a-bitches. |
Meanwhile, wrap flour tortillas in plastic wrap.
Heat tortillas in microwave on HIGH for 30 to 60 seconds or until warm. Place
egg mixture down the center of the warm tortillas. Top each with salsa,
remaining cheese, and bacon bits.
They call for a little too much salsa, I think. It's not that I minded the spice, it's just that it got all drippy when I was trying to eat the thing. |
Roll tortillas, burrito style, and serve
immediately.
I've never been very good at wrapping burritos. But at least these ones stayed mostly closed - I'm getting better! |
My Rating: 4/5 "For a simple set of ingredients, it packs a nice amount of pizzazz Putting the eggs in the cheese makes for a delicious flavor base, and then the salsa adds good kick (albeit with the the salsa caveat above). Cheap noms are good noms."
