½ cup
lime juice
½ tsp
sugar
Salt

cucumber, chopped

scallions, chopped
1 fresh
green chili, seeded and chopped
1 tbsp
chopped cilantro
1 tbsp
chopped fresh mint
| A very satisfying chop. |
Mix the lime juice, sugar, and a pinch of salt together in
a large bowl and stir until the sugar has completely dissolved.
| A good opportunity if you're into whisking things. |
Add the tomatoes, cucumber, scallions, chili, cilantro, and
mint and toss well to mix.
| When I was a kid I envisioned "tossing" as hurling pieces of salad in the air and laughing with glee. The adult version is quite a disappointment. |
Cover with plastic wrap and let chill in the refrigerator
for at least 30 minutes. Toss the vegetables before serving.

My Rating: 4/5 "It's quite tart with its lime juice, which makes for a great accent to the veggie flavors. It's also nice and crunchy. Eat it as a side or a snack, or with a some bread to make the kachumbar its own meal."
