½ cup
lime juice
½ tsp
sugar
Salt

cucumber, chopped

scallions, chopped
1 fresh
green chili, seeded and chopped
1 tbsp
chopped cilantro
1 tbsp
chopped fresh mint
A very satisfying chop. |
Mix the lime juice, sugar, and a pinch of salt together in
a large bowl and stir until the sugar has completely dissolved.
A good opportunity if you're into whisking things. |
Add the tomatoes, cucumber, scallions, chili, cilantro, and
mint and toss well to mix.
When I was a kid I envisioned "tossing" as hurling pieces of salad in the air and laughing with glee. The adult version is quite a disappointment. |
Cover with plastic wrap and let chill in the refrigerator
for at least 30 minutes. Toss the vegetables before serving.
Once again, Indian cooking has managed to make vegetables delicious in new and exciting ways. Yay! |
My Rating: 4/5 "It's quite tart with its lime juice, which makes for a great accent to the veggie flavors. It's also nice and crunchy. Eat it as a side or a snack, or with a some bread to make the kachumbar its own meal."
