11-ounce can condensed Cheddar cheese soup

10-ounce packages frozen chopped spinach, thawed and drained

cooked rice

In a 2-quart saucepan cook bacon till crisp; drain,
reserving drippings.

Crumble bacon and set aside. In reserved drippings cook
carrot and onion till onion is tender.

Stir in soup, spinach, rice, and milk.

Turn mixture into a 1-quart casserole. Bake, covered, at
375F till heated through, 35 to 40 minutes. Sprinkle with the crumbled bacon.
Makes 6 to 8 servings.

My Rating: 4/5 "Spinach is a wonderful thing. This casserole is a nice side dish or a substantial meal-in-a-bowl. The bacon and soup add nice accents to the flavor of the spinach, and the overall effect is quite pleasant!"
