tortilla chips
1 cup
refried beans
¾ cup
shredded cheddar cheese

jalapeno slices (fresh or pickled)
½ cup
chunky salsa
1 cup
folly cooked grilled beef or fully cooked chicken, diced (optional)
[sour
cream and/or guacamole, optional]

Canned refried beans, on the other hand... not a fan. |
Put the chips on a microwaveable platter in a single layer.
Microwave the refried beans in a microwavable bowl until they are warm (1-2
minutes).
Spread 1 tablespoon of refried beans evenly on each
tortilla chips and top with cheese and beef or chicken (if desired).

We went with ground beef, and Matt seasoned it up nice. |
Microwave until cheese is melted (approximately 20-30
seconds).
Top each nacho with a single slice of jalapeno and serve
immediately with salsa. Finish the dish by adding your favorite toppings such
as sour cream and/or guacamole.

My Rating: 4/5 "I chose this recipe to make because I wanted to make fun of it. Put beans on each individual chip? I thought. And while I maintain that refried beans are not necessary in general, these ones did make a nice base for the toppings. Also: sour cream and guacamole are never optional."
