Dry Ingredients:
2 cups
all-purpose flour
2
teaspoons baking soda
Heaping
1 teaspoon cinnamon
Heaping
½ teaspoon ground ginger
½
teaspoon ground cloves
¼
teaspoon salt
½ cup
corn oil
1 cup
sugar
¼ cup
molasses
1
large egg, lightly beaten
1 ½
tablespoons melted butter or cooking spray for greased cookie sheets
1 cup
cystallized (coarse) sugar
Preheat the oven to 350 degrees. Sift together the Dry
Ingredients.
Sifting is just friggin' fun. |
Mix the corn oil with the sugar in a mixing bowl, beating
until light and fluffy. Stir in the molasses and the egg.
Stand by for gorgeousness. |
Add the dry
ingredients in several batches and mix thoroughly. Gather up the dough, wrap in
plastic, and chill in the refrigerator for 2 hours, or in the freezer for 30
minutes.
Roll heaping teaspoons of the dough into balls. Dip one
side fo each ball into the crystallized sugar and arrange the balls, sugared
side up, about 3 inches apart on greased cookie sheets. Bake the cookies in
batches in the middle of the oven for 8 to 10 minutes, or until they are puffed
and cracked on top. Slide the cookies with a spatula to a cooling rack and let
them cool.
