cup oil
3 eggs
1 cup
boiling water

(4-serving) pkg. any flavor fruit-flavored gelatin dessert mix

(8-oz.) container frozen whipped topping, thawed

Bake cupcakes as directed. Cool in pan for 15 minutes.

In a small bowl, combine 1 cup boiling water and
fruit-flavored gelatin dessert mix; stir for 2 minutes or until gelatin is
completely dissolved.
Poke holes in the top of each cupcake with a straw and
spoon about 2 teaspoons gelatin over each cupcake.

Refrigerate 2 hours. Frost with whipped
topping.
Matt wasn't sold on using Cool Whip as icing, but I kind of loved it. (Also I kind of adore Cool Whip.) |
Decorate with candy sprinkles.

My Rating: 4/5 "Not only are they good cupcakes (moist, tasty, etc.), these are a great little snack for a sportsball party since you can make them any color you want. I took them tailgating and they held together nicely in the heat for something made of Jello - people seemed to really enjoy them!"
