¼ cup sauerkraut, rinsed
Dash
caraway seeds
1 slice
rye or wholewheat bread, toasted
1
teaspoon mustard
1 ounce,
cooked, sliced turkey
1
(1-ounce) slice Swiss cheese
4 slices
tomato
In small saucepan or microwave, heat sauerkraut with
caraway seeds. Drain well.
Spread toast with mustard and top with turkey.
Don't toast it too much the first time, because it's going right back in that oven. |
Spread with sauerkraut over turkey and top with cheese.
Heat in microwave or toaster oven until warmed through and
cheese begins to melt. Top with tomato slices.
Served up with some Spicy Collards and Okra - a little meal that I'm pretty proud of! |
My Rating: 4/5 "Turkey is an interesting healthy substitute for corned beef in the traditional reuben, and open-faced sandwiches always make me feel fancy. Careful not to put it too close to another dish, though - the bread gets soggy."
