1 bunch
broccoli (fresh) or 2 packages frozen
5
tablespoons olive oil
2 garlic
cloves, minced
1 small
onion, chopped
Salt and
fresh pepper to taste
Discard tough portion of the stems and cut broccoli into
1-inch-long pieces. Parboil in salted water for just 1 minute.
Parboil, or part-boil. Just boil it in salted water for only a minute. |
Remove and drain
well. You can do this ahead, or use leftover cooked broccoli. Heat olive oil
and saute garlic and onions until golden brown.

Add the broccoli, stir and
saute until heated throughout.
Whole Foods doesn't do "small" onions, so this ended up having lots and lots of onion. |
Add salt and pepper to taste. Serve hot.
Served up with some nice sweet potato gnocchi. |
