White Trash Cooking, p, 79
1 small
cucumber, sliced
6 – 7
eggs
2
scallions or 2 tablespoons of chopped onion
1/3 cup
of milk, cream, or sour cream
1 squirt
of Tabasco or Worcestershire sauce
Salt and
pepper to taste
1 big
dash of curry powder
Fry onion and cucumber til limp and you can see through them.
Obviously these cucumbers aren't quite there yet. |
Remove from skillet.
Add beaten eggs, salt, pepper, and sauce to hot skillet.
The recipe didn't say when to add the milk, so I just threw it in while I was beating the eggs. |
When
eggs are lumping, add cucumber and onions. Stir til it’s medium soft, or hard,
or whichever you like.
It ain't pretty, but it's dinner. |
Good with hot sardines and mustard.
We opted for some pumpkin corn bread (from a delicious mix!) instead. |
My Rating: 3/5 "If you want to zazz up your scrambled eggs, this is an interesting way to do it. I could have handled more spice than just the Worcestershire sauce, but everyone's palate is different. As it was, the dish was nice and filling."
