Simple 1-2-3 One Dish, p. 126
2 cups
frozen broccoli florets
2
tablespoons water
2 cups
uncooked instant rice
½
teaspoon chili powder
1 can (about 15 ounces) black beans, rinsed
and drained
1 cup
salsa or picante sauce
¼ cup (1
ounce) shredded Cheddar or pepper jack cheese
Place broccoli and water in medium microwaveable dish. Cover
loosely with plastic wrap; cook on HIGH 4 to 5 minutes or until crisp-tender.
Cook rice according to package directions, adding chili
powder to cooking water.
You can also do this in the rice cooker - just throw the chili powder in the water. |
Stir beans and salsa into hot cooked rice.
Beans, beans. |
Top each serving
of rice and beans with broccoli and cheese.
I'll admit I used a squidge more cheese than the recipe called for. |

My Rating: 3/5 "It's hard to go wrong with beans and rice. At the same time, you'll vaguely wonder what this broccoli and cheese is doing on top of your beans and rice. It's not really bad, it's just odd."
