old-fashioned oats

5-ounce package dried cranberries (about 1 cup)

white chocolate chunks or chips
Preheat oven to 375F. Using an electric mixer, beat butter or
margarine and sugar together in a medium mixing bowl until light and fluffy.
Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate
mixing bowl.
They're a little unwieldy when you put them together, but keep stirring and magic will happen, I promise. |
Add to butter mixture in several additions, mixing well after each
addition. Stir in dried cranberries and white chocolate chunks.

Drop by rounded
teaspoonfuls onto ungreased cookie sheets.
These do expand, though, so be careful. |
Bake for 10-12 minutes or until
golden brown. Cool on wire rack.

My Rating: 4/5 "These are unique and awesome. The white chocolate gives it a candy flavor that's an improvement on your usual oatmeal raisin aesthetic and the craisins add a pop of tartness to that candy. The raw dough isn't great, so I didn't have high hopes, but the cookies themselves really were great!"
