3 cans
(15 oz. each) sweet potatoes, drained
¼ cup
butter or margarine, melted
1 tsp.
ground cinnamon
1 tsp.
ground ginger
¼ tsp.
ground nutmeg
3 cups
miniature marshmallows
Heat oven to 350F.
Beat potatoes, butter and spices with mixer until well
blended.
Spoon into 1-1/2 qt. casserole sprayed with cooking spray;
top with marshmallows.
Real talk: Canned sweet potatoes are pretty soft and you can whip these up with a fork just as easily as with a mixer. |
Bake 15 to 20 min. or until potato mixture is heated through
and marshmallows are lightly browned.

My Rating: 4/5 "I'm not sure if I kept it too long in the oven or what, because the marshmallows came out kind of dry and hard. But overall this is a great excuse to have dessert while lying to yourself that it's a side dish. Never pass up an opportunity to do that."
