¼ cup
red onion, finely chopped
¼ cup
white onion, finely chopped

teaspoons olive oil
1 cup
finely chopped celery
1 ½ cups
peeled, seeded and chopped plum tomatoes
6 cups
of chicken broth
Salt and
pepper to taste
Grated
Parmesan cheese
1 cup
pasta

In a large stockpot combine olive oil, onions and chicken
broth. Bring to a boil. Season to taste with salt and pepper. Reduce heat to
low and allow to simmer for 10 minutes. Add celery [and tomatoes?] and simmer
for 5 minutes. Stir occasionally. Turn off heat and add pasta to stockpot.
I used tiny shells, which added nice complexity to the thing. |
Ladle into soup bowls, sprinkle with Parmesan cheese. Serve.
