1 can
(20 oz.) pineapple chunks or tidbits
1 can
(11 or 15 oz.) mandarin oranges, drained
1 large
banana, sliced
1 kiwi
fruit, peeled, halved and sliced
1 cup
quartered strawberries
¼
teaspoon grated lime peel
2
tablespoons lime juice
1
tablespoon honey
Drain pineapple; reserve ¼ cup juice.
Combine pineapple, mandarin oranges, banana, kiwi fruit and
strawberries in bowl.
Great colors! |
Stir together reserved juice, lime peel, lime juice and
honey.
It takes a lot of stirring to get the honey and the juice to combine - but it's worth it! |
Pour over salad; toss to coat.
Down the hatch! |
A little soupy at the end, but that means there's lots of nice sauce. |
My Rating: 4/5 "It's a more sophisticated twist on a standard fruit salad, and it's pleasant and refreshing. I heart kiwis, so I wished there had been more of them in here, but everything was still really nice!"
