9-inch
pie shell, partially baked or, if unbaked, brushed with egg white
2 T.
shallots
1 T.
butter
6-8
ounces cooked, chopped shrimp (or tiny whole shrimp)
1 T.
flour
1 cup
shredded Swiss cheese, divided
3 eggs
1 C.
light cream
Pepper
Dash
nutmeg
Have pie shell ready. Saute shallots in butter for 1 minute.
Add shrimp.
Skrimp skrimp skrimp! |
Mix in flour. Sprinkle ½ C. of shredded Swiss cheese in the bottom
of the pie shell. Spread with shrimp mixture and top with another ½ C. of
shredded Swiss cheese.
It's been too long since I've had a nice big bite of Swiss cheese. |
Beat eggs with cream, pepper, and a dash of nutmeg. Pour
into the shell. Bake at 350F for 30-35 minutes until set.
All done! (Apologies for my lack of skill with pie crusts, but I think it turned out nice-looking regardless.) |
My Rating: 4/5 "It's really comforting comfort food. The quiche is nice and mild, but the flavors are still soothing and delicious. Plus you get to feel fancy because you made a quiche."
