1 pound
ground beef
½ cup
sliced green onions
1 clove
garlic, minced
2/3 cup
chopped water chestnuts
½ cup
chopped red bell pepper
¼ cup
stout, such as Guinness
2
tablespoons hoisin sauce
1
tablespoon soy sauce
2
tablespoons chopped fresh cilantro
1 or 2
heads leaf lettuce, separated into leaves (discard outer leaves)

Brown ground beef in medium skillet; drain fat. Add onions and garlic. Cook until tender. Stir in water chestnuts, bell pepper, stout, hoisin and soy sauce. Cook, stirring occasionally, until bell pepper is crisp-tender and most of liquid has evaporated. Remove from heat.

Stir in cilantro. Spoon ground beef mixture onto lettuce
leaves; sprinkle with additional hoisin sauce, if desired. Wrap lettuce leaf
around ground beef mixture to make bundles.
They were my first lettuce wraps, so I didn't get them as fancy as I could have. Still attractive, though! |
Tip: Slice additional green onions into long strips and use
to tie leaves in place around bundles.
My Rating: 4/5 "Great flavor here - and it cooks nicely throughout the meat, which is unusual. The lettuce adds nice crunch. The best part is that it's quite filling and pretty low-calorie!"
