Everyday Italian Eats, p. 25
CAKE:
½ c.
pancake mix
1 egg
½ c.
sugar
1/3 c.
milk
1 c.
diced fine apples
1/3 cup
melted oleo
TOPPING:
¼ c.
brown sugar
¼ c.
pancake mix
½ tsp.
cinnamon
¼ tsp.
nutmeg
2 T.
soft butter (oleo)
¼ c.
chopped nuts
In a medium bowl, combine pancake mix, sugar and apples.
All shiny and sugary! |
In
another bowl beat oleo, milk and egg well. Add to dry ingredients until well
blended. Pour into an 8-inch square pan. In a small bowl, mix together brown
sugar, pancake mix, cinnamon, nutmeg, butter (oleo) and chopped nuts. Should
look like coarse meal.
Don't worry - it's fine if you use butter instead of oleo. ;) |
Sprinkle on top of butter and bake at 375F for 30
minutes or until done.

My Rating: 4/5 "Great flavor! It's a nice and moist - maybe even a little too moist, because it falls apart a little more easily than it should. But I made this as dessert one night and had it for breakfast for the rest of the week, and it was such a treat!"
