The only way I could figure to make zucchini ribbons was to go at one with a peeler. It worked out well, fortunately. |

Toss farro, zucchini, tomatoes, onions and pesto in a large
bowl; season with salt and pepper. Serve over spinach.
Served up! (That's barley instead of farro, but it worked out well.) |
