1 box
fudge brownie mix
1/3 cup
vegetable oil or melted unsalted butter
2 large
eggs
1 ½ cups
semi-sweet chocolate chips or chunks (optional)
1 16oz
can vanilla frosting
Preheat oven to 350F. Spray cookie sheets with nonstick
cooking spray.
In a large mixing bowl combine brownie mix, oil, and eggs
with wooden spoon until just blended and all dry ingredients are moistened;
stir in chocolate chips (optional).
I used mini chips, which I thought made the texture more appealing. |
Drop batter by heaping tablespoons, 2 inches apart, onto
prepared cookie sheets.
My husband got me one of those things that goes Cha-schwoop! and makes perfect little round cookies. I love it. |
Bake 11-14 minutes until cracked in appearance and just
barely set at center when lightly touched.
Cool 1 minute on sheets. Transfer to wire racks with metal
spatula and cool completely.
Spread frosting on half the cookies and top with another
cookie.
Less is more, here. The frosting isn't very firm and will squoosh out the sides. |
Gently press together.

My Rating: 4/5 "The flavors here are all really appealing - I mean, it's brownies and icing! Be ready for it to be a little harder than you're expecting. It looks like a whoopie pie, but because it's a brownie it's much firmer than a whoopie pie. A nice little splurge of decadence, though."
