1 box
fudge brownie mix
1/3 cup
vegetable oil or melted unsalted butter
2 large
eggs
1 ½ cups
semi-sweet chocolate chips or chunks (optional)
1 16oz
can vanilla frosting
Preheat oven to 350F. Spray cookie sheets with nonstick
cooking spray.
In a large mixing bowl combine brownie mix, oil, and eggs
with wooden spoon until just blended and all dry ingredients are moistened;
stir in chocolate chips (optional).

Drop batter by heaping tablespoons, 2 inches apart, onto
prepared cookie sheets.

| My husband got me one of those things that goes Cha-schwoop! and makes perfect little round cookies. I love it. | 
Bake 11-14 minutes until cracked in appearance and just
barely set at center when lightly touched.
Cool 1 minute on sheets. Transfer to wire racks with metal
spatula and cool completely.
Spread frosting on half the cookies and top with another
cookie.

My Rating: 4/5 "The flavors here are all really appealing - I mean, it's brownies and icing! Be ready for it to be a little harder than you're expecting. It looks like a whoopie pie, but because it's a brownie it's much firmer than a whoopie pie. A nice little splurge of decadence, though."
