½ (16
ounce) package linguine
½ (16
ounce) package thick sliced bacon, chopped
1 (16
ounce) package frozen broccoli florets
1
tablespoon chopped garlic
¼ cup
fresh squeezed lemon juice
¼ cup
olive oil
1
tablespoon chopped fresh thyme
2
teaspoons lemon zest
½ cup
shredded parmesan cheese
Prepare pasta according to package directions; drain.
Meanwhile, in large skillet, over medium-high heat, cook
bacon until crisp; remove to paper towels.
I was a little floored when I realized that I was using up most of a thing of turkey bacon for this. |
Drain off excess grease from pan.
Add in broccoli and garlic; saute until heated through.
Definitely should have used a bigger skillet. |
Add pasta, lemon juice, oil, thyme and zest; toss to coat. Salt and pepper to taste, continue cooking until heated through. Toss with
bacon and cheese.
It's really hard to get this to mix together well. |
But if you can kind of get it done it's very pretty! |
My Rating: 4/5 "The lemon and olive oil together on the pasta are amazing! Broccoli is a nice addition - I'm universally a fan of broccoli cooked in garlic. My only qualm with this is that it's DRENCHED in bacon. I mean, I like bacon, but this is excessive. I'd try dialing it back if I made this again."
