1 large orange

fresh orange juice

almonds, chopped and toasted
1 cup
dried cranberries
Preheat oven to 375F. Grease a 9x5-inch loaf pan.
In a large bowl, whisk together flour, sugar baking powder,
baking soda and salt. In a small bowl, whisk together butter, egg, buttermilk,
orange zest and orange juice. Add wet ingredients to dry ingredients until just
combined.

Gently fold in almonds and cranberries.
Pour batter into prepared pan.
It'll get a little puffier, but not a lot puffier. |
Bake for 45-55 minutes, until
golden brown and a toothpick inserted comes out clean. Cool in pan for 10
minutes. Move to wire rack to cool completely.

My Rating: 4/5 "This is absolutely delicious. Seriously. Cranberry + Orange + Almonds = Happiness. The consistency didn't come out quite ideally, though, in the respect that when it got sliced it was really crumbly (and kind of disintegrate-y) on the outside and still not quite done on the inside despite passing the toothpick test. Maybe that's just at my-oven thing, but be on the lookout."
