finely ground honey graham crackers

ounce) cans sweetened condensed milk

key lime juice

In medium mixing bowl, combine finely ground crackers, sugar
and melted butter; mix until well combined.
The fun part is whacking the mess out of some graham crackers with a rolling pin. |
Press into a 9-inch pie plate. Bake
in a preheated 350F oven 8-10 minutes.
I gave up trying to get it to come artfully up the sides and just made a thick bottom-only crust. It worked ok. |
Meanwhile, place egg yolks in a large mixing bowl. Using an
electric mixer, beat on high until light and fluffy. Reduce speed to medium and
gradually add condensed milk; beat until thickened (about 2 minutes).
This really does get magically thicker! |
Reduce speed to low; slowly add in lime juice until just
combined. Pour into prepared graham cracker crust. Return to oven and bake
15-20 minutes or until filling it set. Cool completely. Refrigerate until ready
to serve.
So smooth and cool and pristine! |
Serve with whipped cream, if desired.
