1 cup
chopped frozen broccoli
¾ cup
whole wheat flour
1 cup
white flour
½ cup
skim milk
1
tablespoon butter, softened
1
teaspoon baking powder
2/3 cup
grated cheddar cheese
Vegetable
cooking spray
Salt and
pepper
Skim
milk
Preheat the oven to 400F.
Cook the broccoli according to package directions. Drain well
in a colander. Cut the cooked broccoli into tiny pieces. Set aside.
In a mixing bowl, combine the flours, milk, butter, and
baking powder. Add in the broccoli and the cheese. Stir with a spatula (or with
your hands) until the ingredients form a ball of dough.
You'll need you use your hands; this is a really crumbly and unwieldy dough. |
Place the dough on a flat surface sprinkled with flour. Knead
the dough about five times.
Divide the dough into 12 balls of the same size.
Spray a baking sheet with cooking spray.
Roll each ball of dough in your palms or on the floured surface
to form a stick about 6 to 8 inches (15 to 20 centimeters) long. Lay the sticks
on the baking sheet.
I wasn't as good as I could have been about getting them equally sized.. |
Pour a little milk in a small bowl and brush on the tops of
the sticks with a pastry brush. Sprinkle with salt and pepper.
Bake the sticks at 400F for about 18 to 20 minutes or until
browned and crispy. With a turner, move the sticks to a wire rack to cool.
Served up with a baked chicken breast topped with leftover Sweet Onion Jam. |
My Rating: 4/5 "These actually really do taste like broccoli and cheese. If you're a raised-up-on-Hot-Pockets person like me, you'll understand the reference that they're a lot like the broccoli and cheese Hot Pockets but without the meat. They're decent on the calories and add a nice bready accent to a meaty main dish."
