plain, fresh goat cheese
1 sprig
fresh rosemary

extra virgin olive oil
Preheat oven to 350F. Spread garlic on the bottom of a 5X9 (1
1/2-inch deep) casserole. Crumble cheese over garlic. Place rosemary sprig
between cheese and side of dish, following the curve of the dish. Tamp the
cheese down evenly with the back of a spoon. Top with olive oil, until it
reaches about 1/8-inch from the top of the dish. Sprinkle with fresh black
pepper, or minced, jarred green peppercorn if desired. Bake for 10 minutes,
until bubbling.
Just use a little ramekin. That's the only kind of dish that makes these instructions make sense. |

The rosemary sprig adds enough dimension to the flavor to keep you on your toes, while the olive oil makes the texture wonderfully appealing. In short: Eat this."
