g cooking apples, peeled, cored, and chopped
1 tbsp
honey, or to taste
1 tsp
ground cinnamon
2-3 tbsp
water
1 ¼ cups
lowfat strained plain yogurt
5 oz/140
g fresh raspberries
Few
fresh mint sprigs, to decorate
Place the apples in a pan with the honey, cinnamon, and water
then place over low heat. Cook, stirring occasionally, for 12 to 15 minutes, or
until the apples are soft and fluffy.

Remove from the heat and beat until free
from any lumps. Let cool.

Make SURE you get a kind of apple that gets soft when it cooks. I didn't, and I had to do this with a potato masher and a ton of elbow grease. |
Place the yogurt in a large bowl and stir in the apples. Set
aside a few fresh raspberries for decoration then stir the remainder gently in
the apple mixture. Spoon into 4 individual dishes and child for at least 1
hour.
Decorate with the reserved raspberries and the mint sprigs
and serve.
